Ice Cider is a delicious and sophisticated sweet wine made from apples using natural cold weather to concentrate the flavors and the sugars of the fruit before fermentation.   Originally developed in Southern Quebec, it has a remarkable complexity and balance that is usually associated with fine dessert wines.  Ice Cider is becoming recognized as a premier North American specialty.

The Vermont Ice Cider Association is a group of dedicated artisanal producers committed to making Ice Cider in the tradition established by our Quebecois neighbors just to our North. We share with them a frosty winter climate, a centuries-long heritage of apple culture, and a passion for quality.

Pre-fermentation sugar content of not less than 30° Brix achieved solely by natural cold concentration

Finished residual sugar content of not less than 130 g per litre

Alcoholic strength of between 7% and 13% by volume
